Founded in 1947 by Kamil Agirgun, known as Borekci Kamil, this humble bakery is one of Istanbul's last standing wood-fired (kara firin) borek ovens. Famous for its kurt boregi — a deceptively simple pastry of layered dough, butter, and powdered sugar — the shop has fueled Golden Horn dockworkers, artists, and politicians for over 75 years. The name itself sparks debate: is it kurt boregi (Kurdish borek) or kut boregi (blunt borek)? The family says it comes from the Kurdish origins of the recipe, brought from Bingol in the 1890s. Arrive early — they close when the day's batch runs out, usually by late afternoon.
